Easy, cheap coleslaw 

The husband went to China on Friday and me and baby Blip has been home alone. Its really strange to be home without the husband, nobody to talk to about Mr Blip. No daddy to change baby blip in the morning. First nappy is always daddy’s. Anyways this mean at the moment I’m trying to eat up everything in the fridge and freezers, that way I can clean and defrost them proper.

Before the husband went to China we have been eating a lot off comfort food, I spoilt him. We have had a lot of coleslaw (also because I had half a cabbage left).

This is my super easy and cheap recipe, it can be varied as fits you or freezer.

Easy and cheap coleslaw (56p)

Serve 2-4 as a side dish

1/2 white onion (5 p)

1 small carrot (or half large) (15 p)

1/8 Cabbage (around 100g), either white or red (12.5p)

1 tsp mustard seeds (7p)

5 tbsp Mayo (8p)

2 tbsp milk (3p)

1 tbsp oil (2p)

1 slice preserved lemon (optional) (4p)

Salt and pepper


Method

Slice the onion fine, the final cut the cabbage. With a veg peeler peel the carot, afterwards with the knife julienne the carot to sticks around 4 cm long. Take out the lemon flesh and chop finely.

In a bowl combine Mayo, milk and oil whisk together, consistency should be like double cream. Now add the lemon (if using) and the mustard seeds and taste with salt and pepper.

Add carrots, cabbage and onion and mix well. Taste and add further salt/pepper if needed.

Panacotta :-) mmmm

My husband loves Panacotta, especially one from the Co-op with chai flavour. However it is rather expensive £3.50 for two small pots! So I decided to make them myself today as a treat for the husband before he goes to China. 

I also cooked a lovely Nandos inspired meal. Mmm 

  
Baby blip was not too happy to let mommy cook, but wanted to be carried. Really hope the teething soon stops!

Panacotta recipe 
(Makes 6)

It’s super easy

Ingredients

250ml milk 

250 ml double cream

25 g sugar

3 gelatine leafs

(Vanilla, or teabags or whatever flavour you desire)

Method:

Soak leafs in cold water
Add milk, cream and sugar to saucepan together with flavour. I added flavour with 2 earl grey teabags. Bring to a simmer (don’t let it burn). 
Take out the teabags or vanilla pods etc. 
Take of heat
Squeeze water out of gelatine letters. 
Add to milk mixture and mix it together. When mixed well (gelatine de solves) add to ramekins or glasses. 
Leave in fridge to set min one hour I would say longer.
Now turn onto plates, I’m lazy leaves them in glass 
Put decorations on 

And eat!

  

Chicken

Danish style curry – Kylling I Karry

The other night we made homemade kebabs with all the trimmings. Which left me with 3/4 of a cabbage. Normally I struggle with cabbage and ends up wasting it. Hence, I tried to find a use of it. Suddenly I was reminded of a very Danish meal “Boller I Karry”  translated to English it is “Meatballs in Curry”.This is a very child friendly dish and a favourite with many kids in Denmark, the curry is very mild almost sweet. 

However, the dish I ended up making is a variation of this, instead if includes chicken breast and cabbage! Still got 1/3 of the cabbage left. 

The husband loved it, said that it was exactly what he expected it would be when I told him I was making Danish curry. Froze one portion for me to eat one day. 

serves 2-3

250 g chicken 

1/3 white cabbage, cut into pieces

1 tbsp East Indian style curry powder

2 tbsp vegetables oil

1 finely chopped onion

1 carrot finely sliced 

1 Apple diced

300 ml water

Salt and pepper to taste

method 
  1. In a pan add the oil and curry powder, let it cook for 1 min.
  2. Now add the onions and cabbage. Cook until translucent.
  3. Then add the chicken, cook for 2 minutes. 
  4. Now add the water, carrots and apple, let it simmer until chicken is cooked through.this should take around 5 minutes. 
  5. Adjust seasoning to taste. 
  6. Serve with rice.

Colombian frijoles- a cheap stable in our house

As my husband is Colombian and I’m Danish, we both crave different things at times. But certain things has become a stable in our house and one of these are Frijoles (kidney beans with rice). There are many different ways of cooking this. This is our way

Frijoles – serves 4 best served with rice, fried plantain and egg

1 tin kidney beans
1 small onion
3 springonions
2 medium sized potatoes, diced
4 garlic cloves
200 g bacon finely chopped
1 tbsp veg oil
1 tbsp cumin
1 tsp paprika
1 tsp coriander powder
1/2 tsp oregano
350 ml water
1 chicken stock cube
Salt & pepper to taste
Small handful Coriander
1. Finely dice onion, garlic and spring onion
2. Cut potatoes to dices (1 cm)
3. Cut bacon fine
4. In a pot add oil, firstly finely fry the bacon, the add the onion, garlic and spring onions cook for 5 min on low heat. Now add all spices (except salt and pepper) add chicken stock, kidney beans and potatoes. Cook until kidney beans and potatoes is done. Add salt/pepper to taste
5. Serve with coriander on top and rice on side. A fried egg and ripe plantain is really nice
