As my husband is Colombian and I’m Danish, we both crave different things at times. But certain things has become a stable in our house and one of these are Frijoles (kidney beans with rice). There are many different ways of cooking this. This is our way
Frijoles – serves 4 best served with rice, fried plantain and egg
1 tin kidney beans
1 small onion
3 springonions
2 medium sized potatoes, diced
4 garlic cloves
200 g bacon finely chopped
1 tbsp veg oil
1 tbsp cumin
1 tsp paprika
1 tsp coriander powder
1/2 tsp oregano
350 ml water
1 chicken stock cube
Salt & pepper to taste
Small handful Coriander
1. Finely dice onion, garlic and spring onion
2. Cut potatoes to dices (1 cm)
3. Cut bacon fine
4. In a pot add oil, firstly finely fry the bacon, the add the onion, garlic and spring onions cook for 5 min on low heat. Now add all spices (except salt and pepper) add chicken stock, kidney beans and potatoes. Cook until kidney beans and potatoes is done. Add salt/pepper to taste
5. Serve with coriander on top and rice on side. A fried egg and ripe plantain is really nice

I'm a single mum with two adorable kids, Flipper and Blipson, they will be known as here.
Until January 2019 I was working, but we found it wasn't compatible with my partners work pattern and the many hours he worked. Hence, I gave up my job and focused on the boys.
Then, me and my ex-partner decided to split up at the end of 2019 and it has been a rollercoaster ever since, to get to terms with being a single mum. Managing a life just with them, moving house and starting on a fresh. Luckily, we still have a good relationship and happily spend time together with our kids. Which I believe is so important for them.
It's hard having given up a job and then suddenly finding yourself on your own, however, it is for the best. I hope at one point in time to start working again. But until Flipper start school, (he is 3 but we are deferring him a year due to his hearing impairment), I'll probably stay at home as a stay at home mum.
The good thing is, I have always been good at budgeting and stretching my money. Being a foodie doesnt always go hand in hand with being on a budget, however, it does make you creative. Because of this, we eat quality meals but on a budget.
And this is what I would like to share with you guys.
I have long been considering if I should start from scratch with a totally new blog or just continue on this one. I have decided to continue on this blog, as the past will always be a part of who I am.
Love
Metti, Blipson and Flipper
