Smoked Paprika Pork (£1.84 per portion)

 

Lots of things have happened lately in our household, Flipper has been diagnosed with moderate hearing loss on both ears and requires hearing aids. It was a it of a shock. He can hear but everything is slightly unclear to him. Luckily, we have discovered this early so we can start to intervene and hopefully by the time he reaches school age he will be ok, to express himself. However, he probably will need extra help throughout childhood.

Because of his diagnosis we have started on British Sign Language and Makaton, luckily, Blip loves watching Mr Tumble and to sign with his “baby”.

On top of this Blipson had his 5th birthday, it was lovely, he enjoyed every moment of it. We baked him a Unicorn Rainbow cake which he loved.

Next weekend we will celebrate his birthday with his school friends, which will be lovely.

I have been cooking a lot of lovely food, but never got to write about it. So today I thought it was time to write down one of the delicious meals we have enjoyed, it was Smoky Paprika Pork. I used Pork Tenderloins for this, as I picked some up for 10p in my local Coop, together with 10p potatoes and some 10p salad. This would also have been lovely served with rice, but we have eaten a lot of rice lately.

I used a Sweet Smoked Paprika pork which is not spicy. I like the smoky flavour, and the boys like it as not spicy, so really a win win situation. You could use other cuts of pork, if you make sure you adjust the cooking times accordingly. If you don’t buy any of the ingredients reduced, then this isn’t a cheap meal, coming in at £1.84 per person.

Flipper is a huge fan of meat, if I let him, he would eat all the meat and nothing else. Blipson loves his bread, Yorkshire puddings, green beans, peas, sweetcorn and vegetables… but not so much meat. Blipson also got a very sweet tooth which Flipper don’t have.

Flipper ate everything from this dinner and had seconds, Blipson barely got through one portion. But they are both getting really good at trying new food.

I love the fact that we always serve all the food in the middle of the table as this means, we all get to take what we think we can eat (I serve Flipper though) and it teaches them about self-control. I also find that we waste less food as they can take again if still hungry. However, there are rules attached to this, for instance, the boys can’t just take everything of what they like, they need a variety and they need to eat the things they aren’t too keen on before taking more of what they like.

Smoked Paprika pork

Serves 4 adults

Ingredients

500g pork fillet, trimmed of any sinew and cut into 12 equal pieces

2 tsp smoked sweet paprika

1 tbsp oil

300g closed cup mushrooms, finely sliced

3 garlic cloves finely sliced

1 medium Onion, finely sliced

75ml dry white wine

200g crème fraiche

½ punnet salad cress (optional)

Method:

  1. Start by cleaning and cutting the pork, then coat the port in the paprika and set aside in a bowl. Then prepare the vegetables and mushrooms, onion and garlic need to go in its own bowl and the mushrooms separately.
  2. Heat a large frying pan and add the oil, add the pork and fry for about two minutes on each side, then transfer to a plate.
  3. Now add the garlic and onion to the pan and a pinch of salt and cook for about 5 minutes or until the onions become translucent, then add the mushrooms to the pot and cook for another 2 minutes, make sure to stir it. Then add the wine to the pan, cook off the wine for about 2 minutes then add the crème fraiche and return the pork and any juices to the pan and bring it to a simmer.
  4. Cook it for another 2-4 minutes, or until the pork is cooked through.
  5. Place the pork mixture in a nice serving bowl with the salad cress on top (if using the salad cress).
  6. Serve it with rice or potatoes together with a fresh salad.

These has been based on Tesco prices (June 2019). I normally have cooking wine in my store cupboard, so price is based on this.

Pork Fillet (£7.56/1000g)x500g = £3.89

Smoked sweet paprika (0.85p/48g)x5g = 9p

1 tbsp oil (£3.50/5000ml) x 10 ml

Mushrooms 95p

3 garlic cloves finely sliced 9p

1 medium Onion, finely sliced 10p

75ml dry white wine (£2.00 / 150ml)x75ml= £1.00

200g crème fraise £1.00

½ punnet salad cress (optional) (24p/2)=12p

Total cost £7.34

Per portion (£7.34/4)= £1.84
